This is a gorgeous wine produced from 70% Grenache and 30% Syrah; it has a serious nose of black fruits with a dark, peppery edge; very smooth and approachable on the palate with good energy, so typical of the 2010 vintage. Very delicious and rich and full, tannins well covered though they show a little on the finish – As it’s a little young at present it’s best decanted for 1-2 hours prior to serving.

All of the grapes are harvested manually and sorted by the picker to ensure they arrive intact at the cellar, thus avoiding any form of oxidation.

Complete destemming and a long vatting of 21 days allows the wine to acquire supple but ever-present tannins; ageing takes place initially in stainless steel tanks until the first racking, before transfer to new wooden barrels for 3 to 4 months in order to soften the tannins and gently oxygenate the wine. Finally the wine is bottled and kept for at least 6 months before sale.
